tests/fate/audio: check all components the nellymoser round trip tests need

enc_dec_pcm decodes the encoded FLV back to WAV, so the tests also need
the nellymoser decoder, the FLV demuxer, the WAV muxer and demuxer and
the pcm_s16le codec. ENCMUX checked only the encoder and muxer, so a
build without the nellymoser decoder still selected the tests and they
failed. ENCDEC checks the codec and container both ways.
