    Tests: Simplify theme fixture setup in REST API tests.

    Select the fixture theme directly in `WP_Test_REST_Themes_Controller::set_up()` instead of running `switch_theme()` before each test. Preserve the theme roots, template globals, and theme JSON cache cleanup needed by the controller tests.

    Remove the unused saved theme object. Keep all test methods, data providers, and assertions unchanged.
